A tight but unhurried two-day weekend in Guanajuato Capital: Centro landmarks, Pípila at sunset and a callejoneada on Saturday, mummies, a silver mine and Presa de la Olla on Sunday.
A weekend works in Guanajuato because the historic centre is dense: most of what you came for sits within twenty minutes on foot. The trap is the hills and the altitude — 2,000 m turns an ambitious list into an exhausting one. This plan does two things per day plus one evening ritual, and leaves the middle of each day for a slow meal.
Friday evening (if you arrive early)
Drop your bags, walk to Jardín Unión and have dinner at Mestizo or La Trattoria Centro, then a first drink at Bostom Speakeasy or Los Lobos Bar. If a band is playing on the square, stay for it. Bajío Airport (BJX) is about 45 minutes away — see getting to Guanajuato.
Saturday — Centro, Pípila and a callejoneada
Coffee at Café Tal, Santo Café or Madelie Café, then the Centro loop on foot: Jardín Unión, Teatro Juárez (buy the interior ticket, it takes 30 minutes), the Basílica, Plaza de la Paz, Callejón del Beso and the Universidad de Guanajuato staircase. Finish the morning inside Mercado Hidalgo; the upstairs fondas do enchiladas mineras properly.
Long lunch at Casa Mercedes or Los Campos. Rest in the afternoon — genuinely, this is the part visitors skip and regret. Take the funicular up to Mirador del Pípila about 45 minutes before sunset and walk back down through the callejones. At night, a callejoneada with Callejoneada Estudiantina or Tuna Real de la Mancha — tickets are sold around Jardín Unión from about 7pm — then mezcal at Edelmira's Mezcalería or the rooftop at Xarel Terraza.
Sunday — Mummies, a mine and the reservoir
Be at the Museo de las Momias when it opens; the queue after 11am can eat an hour. From there, taxi up to La Valenciana for the Templo de San Cayetano and a mine tour with Guanajuato VIP Mines or Estigo Tours. If you would rather have art than a mine, the Alhóndiga de Granaditas and the Diego Rivera birthplace are the swap.
Finish with the calmest hour of the weekend: a late lunch at Presa 97 or Café Tal Presa, a rowboat on Presa de la Olla, and a slow walk back along Paseo de la Presa. Buses to León, Querétaro and San Miguel leave from the Central de Autobuses through the evening.

Sleep in the Centro — after a callejoneada you want to walk home, not negotiate a taxi. Hotel Boutique 1850 and Edelmira Hotel are on Jardín Unión itself, Casa Florencia and Hotel Quinta Las Acacias are quieter near the Presa, La Casa Veintidós is a good mid-range pick, and Hostal Casa del Tío is the budget standard. What to cut, and what to add if you have longer
